Default Questions before ordering...

I have been thinking about a new build for a couple months now, and I will make my purchase on January 17. My build will be mainly used for work/gaming/OC. The build will be liquid cooled, obviously. Normally, I would purchase "nothing but the best." However, I do not think that is necessary with the Z68 chipset. I own a Corsair Obsidian 800D, but I do not care for the case anymore. I thought about purchasing a Case Labs M8, but I would have to choose cheaper components to maintain my ~1500 USD budget. Note, I already own two GPUs. Here are my two list:

List One ~780 USD

Core i7 2500k
Asus P8Z68 Pro
Vengeance LP 8GB (White)
Corsair AX 850
Crucial M4 (64 GB)

List Two ~1100 USD

Core i7 2600k
Asus P8Z68 Deluxe
Vengeance LP 8GB (white)
Seasonic Platinum-1000
Crucial M4 (128GB)

If I go with the M8, then I will choose the first list. If not, I will go with the second list. I have the watercooling taking care of, except for the following question: Anyone have any experience with the Koolance CPU 370 using distilled water? I own the block, and I am concerned with thin plating around the micro channels. Any suggestions or ideas are welcome.
