Would anyone know if it is possible to just literally cut off the 4 pin molex, which is attached to the fan, and still have the 3 pin molex be fuctional?

Judging from the way it looks like it's wired up, I don't see why not, although you'd be better served to undo the pins from the 3 pin and do it inside the connector than just cutting as it sits. (Do only one fan first though just in case.... :) ).

I just got 2 Yate Loons (from NCIX hidden sale) and I plan to cut off the molex and splice the wires.

Yes you can cut off the molex as the wires for it just run into the plug for the fan. Molex is for power from the PSU , 3 pin for motherboard.
