I use dual 570s for surround on 3x 1080p monitors and I don't have any complaints other than in game support (i.e. HUD, etc), which has nothing to do with the hardware itself. I can max out all my games except for the top few most demanding titles (metro 2033, BF 3, Crysis 2 DX 11 patch, etc).

As for the water-cooling, I don't fully suggest it, but if the water-blocks you get end up working with the next gen of cards, then it's a decent investment. You're gonna spend just as much on water cooling (if not more) than you will spend on upgrading to new cards.
