Yup. That's about the same conclusion I came to with my HD5870 as well. The 69xx series isn't really that large of an upgrade and current games seems to play fine anyhow, even at 2560x1440.
So in this scenario, I'd say a single HD5850 would be more than sufficient. Or even the cheaper 6850/6870 would be fine too.
