some eVGA boards will do both, mine for example is sold as a SLI board but after doing some digging i found it will Crossfire two, but eVGA didn't feel to mention this (probably because of their work for Nvidia)

As I understand it, you're going to have trouble. Vista won't accept two different display drivers, and apparently Nvidia just announced that they won't allow their cards to do accelerated Physx when an ATI card is doing the rendering, on Windows 7. Maybe it would work on XP?

It should be possible in Windows 7, but as to how to do it, I'm not sure as I've never done it personally, just know its possible in Windows 7.

I do know that nVidia puts some artificial limits on it, but I hear its possible to work around them. I can't say for sure, no personal experience, sorry.

I really do wish I could help you, I have no nVidia cards to try it out for myself and report, and since Windows 7 JUST RTM'ed recently I wouldn't trust what I find in google right now without self verification.

If I had access to some nVidia cards, or cash, I'd go out and figure it out just to satisfy my personal curiosity, and report back.

I know it should be possible, but I can't help, sorry.
