I can't even uninstall the update because the list was completely blank.

The History List was blank. And I been using that computer for months. I installed the SP1 and all the update before I start using it as a file and VM server. Something seriously mess up the Windows Update files on my computer and I couldn't recover. The System Restore even had a 10+ entries that were probably created when I did incremental updates. The latest one was Apr 20-ish and it was Apr 25 or so when I started to diagnose the problem.
