Simply restarting your computer should re-enable driver signature enforcement, unless you did something very crazy (modifying BCD or otherwise), but you'd probably remember doing something that drastic.
Device manager should flag whatever is using an unsigned driver. Find out what is using the unsigned drivers, and try to use the "Roll back driver" feature to go back to a signed one.
