Get a 64GB SSD or more for boot drive and use your 640GB as storage.
you could RAID the HDDs (when you buy more) for backup purposes, but all in all, nothing compares to SSDs...unless you speak of server environment...
IMHO, RAID (unless used for backup or servers), doesn't compare to SSDs anymore. If you do a LOT of writing to disk, HDDs are better tho.
concentrate on getting your applications and OS on a SSD and enjoy...
