Default Two SSDs in RAID 0, One HDD - help

So I have two OCZ Vertex SSDs in a RAID0 array and a single 640gB WD Black. I installed Windows Vista, Virus protection, and all my tweaking tools + updates and drivers on the SSDs. I am now wondering how to put games, music, videos, iTunes, and all of those sorts of things on the 640gb. Is it as easy as setting the directory of the install file to my 640?

My System Specs

Default

Except for music. You need to change location of the 'My Music' folder under C:\Users\yourname. Go to the properties of the My Music, go to location, then change the location of My Music to your WD6400AALS. Everything else you just install to the WD6400AALS.

Under the Local Disk it says my "Users" Folder is 18GB. Well the "Temp" folder is 18GB... Can I move the ENTIRE "Users" folder to the HDD without loosing performance (as in, would moving that folder slow down boot up speed?)
