Default Corsair AX760 PCI-E cable design...

What were they thinking when they designed it like this? Not matter what I've tried it just looks terrible when used...

Most manufacturers do this. One of the biggest reasons I just cut and crimp my own cables.

Is this a recent design change though? Never had this on my TX650, HX1000, or AX850 that I used in my previous builds.

Yeah, definitely a huge advantage in that regard. If you'd like I can make a new set of pcie cables for you to use on your rig. PM me if you're interested.
