A 350W Antec PSU (the minuet one) should be able to handle this computer, right?

I ran a EarthWatts 380W with an Socket 939 AMD X2 4400+ and a 7900GTO without issues. So I think you'll be fine since that PC uses far less power.

Should be fine.

FWIW, in my HTPC I have a Asus P5E-VM HDMI w/e3110 overclocked to 3.6GHz and 4GB of RAM and a 4670 with the cpu running 100% folding for rosetta all running off a corsair 400W and its totaly fine.
