The GPU test in OCCT is messing you up? Last I heard, ATI's drivers automatically try to intervene whenever Furmark or OCCT's GPU test are used, that might have something to do with it. Aside from that, the creator of OCCT was recently working to boost the power draw for the GPU, to the point where the 4870's were being overdrawn. Since the 4870X2 is basically twice the amperage draw, but (I don't think so, anway) not twice the power circuits, the situation might be even worse.

Post your i7 920 (and stepping) OC

After you are happy with your cpu speed, cpu temp, fan speed and noise, etc. You can then slowly increase your memory speed to see how high you can go. If you have not done so, you can run memtest86+ to stress test your memory as its own to see if it can do 2000 at rated spec. BTW, I guess you already know the limit for vtt is 1.65v.

My past overclock experience is AMD64 4000+ on a DFI board. It was a lot of work compared to overclocking this i7 and gigabyte mobo. I find this really easy.
I've found the i7s alot harder to overclock than the S939 line due to the addition of more than 5 additional voltages.
