If you're gonna SLI then go for 670s but NON reference! Reference 680s are pretty decent.

Any reason your thinking of going with the P9X79 Deluxe vs saving a couple bucks and getting the P9X79 Pro, don't think there is much difference other than amount of USB 3 ports and BT 3.0 vs BT 2.0 or something.

I guess your big question on that then would be will you ever run more than 2 GPU's, thats the main advantage of the Rampage 4 ex board. 4 GPUS at 16x where the X79 Pro only goes 2 GPU at 16x

If you have the budget, which it seems that you do, grab a GTX 680. In a few months you may decide to SLI, however a single 680 would be sufficient for most games at those resolutions right now. Grab the motherboard that you want, the Rampage IV Extreme is a very nice board, although there is nothing wrong with the Sabertooth, WS, or Deluxe models either. Watercooling can be a great hobby, but personally I'd recommend starting with a beefy air cooler, or an all-in-one.

7970 is MUCH better bang for buck at the moment and it handles higher resolutions better (generally) than the nvidias and overclocks like an animal..

BUT

I couldn't recommend going x-fire..
Pitty you can't try before you buy... 1 card I would say the 7970 for sure.. 2 cards 670's are the way to go(IMO)..

To max everything and still get good fps in high-end games you'll need dual cards really for either the 27" IPS or 3 1080 screens. (no matter what card you pick)
(obviously depending on the games and how much eye candy you like but from your choices then I'm guessing max settings and min fps as high as possible)

IMO the nvidia's are over-priced at the moment.. and are due a price-drop soon (or risk the same mistakes AMD did when the 680 was launched)
If you can.. hold out on buying as long as you can cos a 7970 is the same / lower price of a 670 at the mo and thats just not right..
