IB-E (if they do release it, I've heard rumours it will be skipped and Intel will go straight to Haswell) will be the same to SB-E as IB is to SB. A few % in processing power per core.

Given your needs a 2500k, or wait for haswell IMO. Personally I would say wait it out...if you can.

I was thinking of just Going from my AMD 6 core to Intel Sandy Bridge just to see how much of a real world difference ( if any difference at all) there is in gaming and other things

Well the hard facts are there as to if sandy bridge is technically faster. However can most people actually notice the extra 10-20 fps? is it that much faster in general windows tasks? However back to the topic I would most likely wait for haswell to see if the new architecture is better at relieving itself of heat than Ivy is at higher clocks. If you need something right now I would say Sandybridge like a few others have suggested

The way I've read it:
1) clock-for-clock, IVB is faster at the same clocks
2) volt-for-volt, IVB is faster at the same voltage
3) watt-for-watt, IVB is faster at the same power consumption
4) degree-for-degree, SNB is faster because it can achieve higher clock speeds at a given temperature

IMO keep both parts and get haswell and a 780 in a yr - 18 months or so..
