If I were you,I would beef up the PSU. The difference in price between a 700 watt and 1000 watt isn't that much money, when you consider what you get. Also, think of future upgrades etc.

for the psu you could upgrade to a corsair AX750 unit. For video card how about a 7950? A little bit more expensive than the 6970, but it is more powerful.

If you're going to be doing 3D rendering and or video editing I'd opt for the 2600k. I do a lot of Photoshop rendering which is nothing compared to lets say 3D Studio Max or Maya. Just my 2 cents.

3d rendering + video editing? Def get the 2600k.

PSU is o.k. but I would recommend corsair ax850 watt for any upgrades, and it runs really really cool (fan won't prob turn on for that load).

Unless OP will OC and put a second card in there an 850w PSU will be overkill.

He's right. I mean only get an 850ax instead of the 750 watt (which is more than enough) if you plan on OC+crossfire.

I think I'll just take the gs800 and 6970 But I think i will upgrade to the 2600k so it can run for a few years
