updated parts list on first page.. feedback on the PSU? Feedback on picking a cool case? I'll be leaving the front and top 1/3 of the case intact and the rest will be converted into an 'aquarium.'

you mean a 212 advanced, right? Don't forget that this will practically be water-cooling as it won't be air cooling down the heatsink, but whatever liquid I pick.

hmmm..then no. get a heatsink with as much space between the fins as possible

something like an hr-02 or better

The Kingwin is actually probably your best bet for a PSU that is reliable to the point you need.
Superflower makes the units kingwin sells, and thus far they seem to have some of the best OEM platforms out there (beating even the vaunted Seasonic in some respects).
I would stick with that CPU.

As for the cooler? stay with the 212, it should have enough fin space for the mineral oil to flow through, the key in this case is volume of movement because depending on the makeup of the oil its thermal properties are the most ideal.
