new mobo need advice pls...?

hey everyone here is my specs:

AMD Phenom II 1055T Six Core Processor 2.80ghz
-evga gtx 580 oc edition video card
-12gb ddr3 memory corsair 1333mhz
-windows 7 64 bit os
-cool master haf 922
-corsair 750w power supply with 80 plus
-22 inch benq led monitor

i just got the following

what i am a bit confused about is that since i am really into gaming and learning to overclock, i was looking at the mobo and there is a button that says oc (meaning overclock) if i press that how much speed will the cpu increase for example from 2.80ghz-3.3ghz? or is it better to do it from the bios?
secondly right now i have 12gb ddr3 corsair 1333mhz but do u think i should decrease it to 8gb-10gb?...i got 4 sticks 2 of them are 2gb and the other 2 are 4gb total of 12.


lastly if i over clock for example from 2.80ghz-3.3ghz how many extra fps will i increase , i know i can go higher but i want to work my way up slowly..
