Nothing against your suggestions but I would suggest going with an:
i7.
about 100 more Watts of power.
Cut down to 6 gigs of ram.
cut the fan controller
Cut theSSD
Go for 5870's instead of 5850's.
Replace the MUX-120 with a Noctua NH-D14 <-- best air cooling in the business, beats a Corsair H50 too. Then again if you're not OC'ing the CPU I guess there's no need for the D14

I like the OP's thinking, plan and absorb the advise. I like the underdog comment as well. Whatever you prefer, it will surely last you a long time. My only gripe about your build is that it will take you 5 months to get everything and who knows what might come out between those times that might change your mind.

methinks there is some room for debate on an i7 860 vs. the i5 750.
For a gaming machine I personally would chose the i5 750.
The i5 is cheaper, runs cooler and is a great overclocker which easier to overclock.
Additionally, most games/apps can't utilize the HT/ v 8 thread capability of the i7.
