Don't have the time to do a full respond to your build however, Shopbot - Compare prices - New Zealand - Price Comparison - Comparison Shopping will allow you to find the cheapest prices for all your parts (you're not stuck with potentially expensive pc stors)

I'd make a couple changes to that. Also, with that kind of budget, it seems a crime to not go 1366.

H50 (beaten by some high-end air cooling) --> Noctua D14 (beats the H50)

800D --> ATCS 840 or something by Lian Li or Silverstone

Super Talent --> Crucial, Corsair, G.Skill. One of the above.

275 CO-OP --> 5850

I haven't price-checked, but for $3000 you should be able to get all of that.

Maybe something along these lines?
Intel Core i7 920
EVGA X58 SLI LE
6GB DDR3-1600 from G.SKILL, Corsair, OCZ
ATI Radeon HD5850/5870 (if you can find them), otherwise go with the non-co-op version of the GTX275 if you want NVIDIA.
Corsair HX750 PSU (or the HX850 if you plan for dual video cards)
Corsair 800D Case
Western Digital Caviar Black 640GB
Windows 7 Home Premium 64bit

I know things are way more expensive in New Zealand, but you should be able to get all that for $3000.

And since your not overclocking right away, I'd just run stock cooling for now. Upgrade that later down the road.

You know, everyone raves about the 800D but I've yet to see the big deal. The airflow is nothings special, it's $300 and not aluminum, the only thing that's really special is that it's so effing huge and has some hot-swap drive caddies.
