you can use Finder or Disk Utility to burn all your IMG/ISOs, data discs. You can also use iTunes for audio disks.

Somethings you might want/like to have:

Bowtie - Puts iTunes info/control right onto the desktop, I like it for the information display
Meteorologist - Weather fetcher application, I have mine displaying in my top bar area(forget what it's called:))
Colloquy - If you do any IRC
Stanza - eBooks if you read em
Adium - IM

And that's pretty much all the extra junk I have installed, there are apps for the rest of what I require that ship as part of the OS.

I think it's kind of funny that because I was an early adopter yours is a MacBook Pro and mine is just a MacBook, really weird decision on their part imo.

I think that there is also an IRC plugin for Adium but it might not be recently updated nd I have never used it.

Also, XQuartz -> XQuartz
Overflow -> Stunt Software - Overflow

*Edit
Cannot remember if this was mentioned yet or not but Perian is handy.
Pacifist
fseventer
TinkerTool
File Juicer
If you like to play super nintendo games, ZSNES or SNES9X.

Gonna have to look into that, I love how versatile Adium is, would love to do my IRC from the same app. Synergy also looks neat, not that I ever even see my desktop or use the controls, Remote for my iPhone does the trick

Maybe try Multiclutch? It works fairly well for some apps that don't automatically support multitouch gestures.
