I would say the iPod Touch/iPhones are the most interesting Apple products for me. Between the App Store and the general ease of use, I think they are very solid products.

For me, it's the Mac Pro. If I'm going to throw my money away I at least want something with powerful hardware!

I would love to have some mac minis! OSX in such a small box has a nice appeal to it.
Oh, and they're freaking expensive, but I would love some apple displays! amazing screens they are. Beat anything I buy for my PCs hands down.
finally, a macbook would be pretty sweet to have.

i think the ipod, because it is pretty much the only good thing that apple's simple interface is good for. the computers i dont like because they are too overpriced, hard to upgrade, and really, im a gamer. what can you play on a mac?
