Personally I would go for the Gigabyte GA-Z77X-UD5H, has support for both SLI & Crossfire, and is a very capable overclocker, I honestly don't think you'll be able to get more then 100-200MHZ at most using a higher end board..
I generally go for mid-end boards because of budget constraints, and also because I can't really justify investing on an enthusiast class board when I could get pretty much the same performance and OC using a mid end board..
When I had a Z68MA-D2H-B3 I was able to get my Core i5 2500K 4.7GHz 12hrs Small FFT's Prime 95 Stable, and I could go higher but didn't have sufficient cooling, and didn't want to get the volts so high..
