Default Help me build a dream Custom PC

Hi guys, I am new to this forum. I am bad at English so don't judge me. I found here thru LinusTechTip Youtube channel and I am going to build a custom PC. My PC right now is kinda sucks:
Intel Core 2 Duo E8400 4 Cores 3.00 GHZ CPU
6GB RAM
450W PSU
9800GT 1GB 256-bit GPU
P5QL-EPU Motherboard.

With the budget around $1200, I really want to build a PC that can satisfy my need like editing video, playing hardcore games at ultra settings...

The parts that I like so far are:

CPU: i7-2600K (Some people prefer i5-2500K since it's slower than the 2600k only 0.1 GHZ and no Hyper Threading)
RAM: 16 GB Corsair 1600 MHZ (Intel official website stated that i7 2600k can only support 1333 Mhz Ram Maximum. Is there any chance I can set it 1600 MHZ?)
Motherboard: ASUS P8Z68-v Pro Gen 3 OR GIGABYTE GA-Z68XP-UD3P OR GIGABYTE GA-Z68XP-UD4 (They are all dual channel for RAM/Memory so if I buy Quad Channel Kit RAM will they work?)
Case: Corsair 500r (Please suggest me some case fan (120mm) because this case can take up to 10 fan (included 3 already) so I only need 4 fans). 4 Fans are all I need. I will also buy H60 Water Cooling for CPU in case if I overclock (WHICH I DON'T KNOW HOW TO!)
Graphics Card: MSI Twin Frozc III 6950 2GB 256 Bit OR EVGA GTX 560 Ti Classified 448 cores 1280 MB 320 Bit OR Sapphire 6970 2GB 256 Bit (SUGGEST 1 FOR ME PLEASE?) I already have one Nvidia GPU so should I run dual Nvidia Case or 1 AMD 1 Nvidia?)
Power Supply: Corsair 650W

I guess I am done with the setup!? What do you think? Give me some feed back and suggestion please because this is my first custom PC so I am really excited! Thanks everybody!

The reason people go with the i5 2500k is that it is the king of performance vs price. I.E. you get the most performance per dollar with the i5 2500k. Do you really need the hyperthreading of the i7? Are you running a ton of video encoding software that can handle 8 threads? Gaming requires 4 cores max right now, and for many games only one or two cores are fully used.

16 gig of memory is probably too much. Go with a 2x4gig kit and you'll be fine. I believe that the socket 1155 procs run @ 1600 mhz without overclocking, and many people have gotten 2000+ clocks stable.

A cheap 1600mhz 8 gig will free up money for your GPU. Most users will not benefit from more then 8 gig, and many users still only need 4 gig.

The Corsair 500r is fine. A good 120mm case fan is anything made by Noctua. There are many other great fans but I love how quiet the Noctua fans are.

What resolution and how many displays are you running? This determines how much video memory you require. The 560 TI is a great card, but so are the 6950 and 6970.

You cannot SLI a nvidia card to an ati card. You cannot SLI every nvidia card to another nvidia card. What other card do you have that you wish to throw in sli?

And if you are runnin two video cards I would recommend a higher watt PSU, mabye even up to 850 watt. For a single card 650 watts should be fine.

I do mainly gaming, a little bit of video editing. I think the i5 is good enough! I have 2 monitors now: 19 inches Acer max 1600x900 and 24 inches Samsung 1080p build in TV. I already have an Nvidia card but it's crappy so I probably will leave it out and use single 6950.
