It's usually better not to in 2p/4p boxes, as the cost to the CPU SMP quick return bonus outweighs the gain from the GPU PPD.

Hmmm This will have to be a dual boot system to measure the differences :)

Hope to have this system together next weekend

now what about HDD's does HDD speed effect folding or should I just use my spare old HDD's in my folders?

Hard Drive speeds have little to no affect, there are very few write's while the system is folding

You can't GPU fold in Linux. No Client for that - yet.
HDDs have no effect on ppd.
Like Sugar said, 2P / 4P rigs rely on their power to complete WUs faster than anticipated. As such, a bonus was instated for SMP WUs that is exponential. Any GPUs that you add (and their associated PPD) will negate the SMP bonus that the CPUs are able of.

your best run would be Linux for the duration of the CC and then you can switch to Win7 for more mundane purposes, as media server, shared storage, occasional gaming and stuff as I do with my 2P folder.

Sounds great I will load Linux on my main system when the case comes in for it and for my GPU folders I will stick with windows.

Thanks for all the help
