I have a dedicated sever and I just use windows 7. Plays pretty much anything that can allows you to run a dedicated server. Mostly used for minecraft.

My System Specs

Default

Linux handles java a lot better then windows does in my opinion, running bukkit on a windows server caused lag and stutter, i wiped that VM and tried debian and it was smooth as silk.

Sounds like a you issue more than anything.

Java is crap on any platform. Linux just carries less over-all overhead from the get-go.

Bukkit has run fine for me on a personal 20+ user MC server for a looong time. Only lag tends to be actual internet lag.

I used to have lag with java then I discovered 64bit java.
