What case is it all going in and what cooler are you putting on your CPU?

My "safe" max temps are 70 for Intel CPU's and 85 for GPU's. There's no hard rule for max temps, but the chips will thermal throttle if you get them too hot.

I would try to keep below 70 load temps on the Sandy Bridge chips 2500/2600
For the gpu, the current Radeons are designed to trip at if I recall 120c on the Vregs-115c on the core and shutdown temp of no more then 125c on Vregs area, however it should never get this hot, as likely there is damage done if it stays t this to long "throttling" itself due to overpower(power tune limits) or overtemp"throttling/shutdown)

A safe temp for GPU would be 80 or below, this lets the Vregs/memory hit maybe 90c or so, well within thier "safe zone" I like to see mine hit no more then 74c or so on my 6870 and previously on my 4870, but 6950/6970 do run warmer so add a couple c to this and your at 80 :)
