Default dual xenon or i7 for workstation?

Im planning out a new workstation build and im having a hard time deciding which way to go with the processor. I'm debating between an i7 920 or dual xenon e5520 processors.
The computer will mainly be used for cad work, some rendering, and some computational purposes. What would you guys recommend me to get out of those choices?

i think it boils down to if you need 8 cores or 4 really. If it's in your budget i'd go with the dual xeon; less wattage per CPU and if you pair it up with the right board you will probably be running a more robust chipset which makes a difference too. You going to be using ECC ram?

I personally would go Dual E5520's and 12gb RAM, like Dalef's latest system. But thats cause I like things excessive. I have no need for that kind of power. If you are handling CAD and rendering, go Dual Xeons. The extra thread handling and higher QPI's will allow much greater speeds. Dont forget to get a decent quadro card too.

I just picked up a nvidia fx3700 video card. If I go dual xenon do you guys have a motherboard you would recommend? I think I am going to go dual xenon as I think it will be a much more stable system and better for what I plan on using it for. BTW, I really like this forum one of best computer forums there is.Oh, and what kinda ram would you guys recommend for a dual xenon setup?

Asus Z8NA-D6C, great board. ATX. No audio so you would need a sound card. RAM, stick with Kingston, KVR1333D3E9SK3/6G . That stuff works, and is cheap!

Is there a board with more pci-e slots you'd recommend? I would like to get a board with 3 pci-e x16 slots, anyone know of one? What about this one:
Newegg.com - SUPERMICRO MBD-X8DAi-O Dual LGA 1366 Intel 5520 Extended ATX Dual Intel Xeon Processor 5500 sequence (Nehalem-EP processor) Server Motherboard - Server Motherboards
