On the e6700 vs q6600, i would go with the quad. It won't oc quite as high but i doubt the difference in clock speed will matter in most if not all games. And as more games start to take advantage of more cores you will be ready for them.
quads will run all kinds of background stuff (like folding!), and crunch video without breaking a sweat.
