Isn't it possible that intel bins them differently based on a more thorough testing process for the chips that pass the "server" test?

Sure is, generally the server chips are the best of the lot, so in terms of ocability you will probably get a few more mhz on average from a xeon. No guarantees though of course. :)

technically it is only the binning afaik ... they will tend to run better on lower volts and oc on less.

the other factor is availability ... many retailers don't carry xeons and you don't get the same retail market impact on prices.

i have a few x3210's - the equivalent retail model would have been q6400 but i don't think the retail ones were released other than ES versions - although i could be wrong. on this.
