I would like to keep the functionality of the LED's on the 200mm fans, however at night I would like to be able to turn them off. Is there anything I can buy or do, to allow me to be able to turn on or off the leds?

You would have to find the wires than controll the voltage to the led, cut them and mod them with some sort of switch

Can someone suggest me a 200mm fan that does not have a fan led that I would not need to mod into the front of the case?
