I just went through buying a few cameras for my wife, daughter and myself. The Nikon S8000 is decent enough, with lots of features normally only found on high end units. Around $250 when I last looked.
I prefer Canon as well. If you plan on spending a few $ for a decent one, consider the 60D. With a 18-200mm IS lens.
My wife's the camera buff, so I don't know a lot. Make sure you get an IS lens if you get interchangeable lens capabilities.
The IS means image stabilizer, so be certain to get a lens with that.
A lot of the other cameras are good, but in this case, from the results I've seen, this is one category where spending more makes a HUGE difference imho.
Check with a local camera store as there are plenty of 2nd hand cameras at quite reasonable prices. They go fast, so you have to check often.
If you have an ebay account, I have gotten some great deals by bidding last second on some items.
Most of the suggestions are common sense stuff that took me by surprise because I didn't know anything.
There's a Nikon camera for sale in the BST, but it's not cheap either.
