Plastic is industry standard for a lot of things low temperature. If plastic was too restrictive we wouldn't be using plastic tubing in the loops.

The kind of restrictions the OP is concerned about is so negligible it's hardly worth talking about let alone typing about. Use a reducing coupling with any length of tubing you want either side it will run fine. A low pressure zone is created right where it turns to half inch (if the flow is going 3/8 to 1/2) which again are so friggin small they aren't worth noting. Something like that is only a conern on a massive scale compared to cooling a computer.

I get excellent cooling from 3/8 loop running my pump lower than spec too... sometimes running water slower is better btw.
