For a note taking computer I/O will make a bigger difference than CPU speed. CPU-wise Core 2 Duo level performance is enough unless you're doing something crazy with Excel spreadsheets. Replacing my laptop to go from a Core2 Duo T7500 to a Core i5 2410M really didn't make much difference to me other than the battery life. However faster I/O like the Momentus XT allows me to start note taking or showing half-done work to group members:
