I am getting better at finding what I want now, but I do find that it takes me longer to get to things like settings, or seldom-used programs.

I had this same issue. But using shortcuts helps this a lot!
Windows key - Start Menu
Win + c - Sidebar
Win + w - Search "settings"
Win + f - Search "files"
Win + q - Search "apps/programs"
Win + x - Admin tools
