670 is plenty for 1 screen.. 2500k will allow you to clock high.. you'll see no real world difference between these at single monitor up to 1920x1200..
The PSU is good for 3 cards.. suggest backing off it unless you are going that route.. 850watt will be plenty for 2 680's.
Grab either a noctua NH D14 or corsair H100 for cooling to push the limits on conventional cooling.
