I would suggest running a two-drive RAID 0 on that Intel chipset, or spending an extra $150+ to get a HighPoint HBA therefore allowing you to run all your drives at the specified SATA III speeds.
Make sure the drives are updated with the latest firmware before building the RAID, and grab a hard drive for back-ups, as a single drive failure in RAID 0 will lose everything.
And yes, you should have no problem running that RAID across the Intel SATA II and SATA III ports, keep in mind that the performance will be lower than that of a two-disk RAID 0 on Intel's SATA III.
