I used to use XP back in the day, now I have a MSDN so I use what ever my fancy is when I am building/testing... but I would put a vote in for Home Server 2011 if your not going to go the QNAP or like NAS product. People will bash it for not having the drive extender capability, but honestly it sucked in 2008 and was a giant fail. 2011 you can use onboard RAID if you want that ability. AND its $50... half the price of windows 7 for a crippled server 2008 thats better suited for this kind of stuff. The Desktop backup feature is also pretty lazy and fool proof.
