My System Specs

Board is fine; overkill, but it will work.
If you never intend to OC, then the 2500 will do. Otherwise, the 2500k is plenty indeed.
HSF: Noctua NH-U12P
Ram: Corsair CMZ16GX3M4A1600C9 Vengeance 16GB 4X4GB DDR3-1600 CL9-9-9-24 Dual Channel Memory Kit - Corsair - CMZ16GX3M4A1600C9 cheaper
GPU: 580 is fine, EVGA is great, but a nice word for Galaxy, with a canadian RMA center.
HDD: look at Samsung and WD too.
Case: personal choice. Enjoy the look of the ones you selected.
PSU: 850w is overkill, unless you intend to go SLI. Otherwise, look into a Seasonic 650w Gold, or an Antec AX750w.

In regards to oc'ing, read, read, read. It's not difficult anymore, and there is a ton of guides out there. Just don't go crazy on Vcore and you'll be fine. Anyway, the 2500 is a very potent CPU even when running stock.
