Yeah, once they release unified 300 drivers, you can have the SLI when gaming fullscreen only be applied to the middle monitor... but that shuts off the two side monitors, which I guess you do not want?
So it sounds like you're best off sticking with your plan to buy a cheap 3rd card to run the non gaming monitor(s).
