There are a couple reasons why server grade cpus are more costly.
-able to use ECC memory
-able to be used with other processors
-usually better binned for being able to handle 24/7 use
-usually has lower power consumption than it's consumer counterpart(sometimes due to being underclocked for reliability)
-longer guaranteed availability
-longer warranty and better RMA service
Of course this doesn't always apply but that's generally why server class cpus are priced higher.
