Here's the Ubuntu guide for lm-sensors:
Xsensors and a bunch of GUI-based monitors are based on lm-sensors, which is what actually does the work.

If you can deal with using the terminal / console, then you can just type in "sensors" (you don't even have to sudo or be root) and get a dump of all your sensor readings.
I'll note however that some AMD processors need to override a driver before they'll give you a temperature reading:
