It works, though CM7 also has DSP Manager which offers similar controls.
Also if you flash FuguKernel on CM7, it provides Voodoo Colour support as well.
I'd strongly recommend flashing these scripts too:
[CWM][SCRIPTS][TWEAKS] ThunderBolt! v2.1.6 - 12/5/11 [CFS + bolt_scripts changes!] - xda-developers Makes the phone much smoother IMO, though I have the GT-i9000M. Captivate should be similar hardware wise though.
