They are basically cheaping out.

Due to substrate sizes, more 16:9 panels can be created from a single sheet of material which in essence increases yields substantially.

In addition, the overall panel quality of 16:9 screens has dropped as well. Very few of them currently use high quality IPS and PVA has essentially dried up in the 16:9 area as well. Samsung's new PLS panels have the potential to really turn things around but they are currently only available on a $900 27" (2560 x 1440 though)and a 16:10 24" unit.
