It comes to whether you like AMD or nVidia. 3 GTX 580s will give you about the same performance as 2 of the 6990s. The 580 cards are easier to get a hold of. There 1.5GB and 3 GB versions of the 580. The performance boost you get from a 3GB version is not worth paying the extra cost to get it.
