What's your motherboard? Are you thinking SLI or Crossfire?
I assume your going to be running the lcd's at native resolution, so your going to need some beefy horsepower. Some NVIDIA and AMD single cards do have 3 outputs, and you might be able to get away with a single high end card, but I would personally go with dual gpus to make sure your experience wont be hampered after investing that much in a nice display setup.
Dual GTX580s or 6950s should do nicely.
I'm assuming your in Ottawa? I'd really like to check out your setup once you have it up and running!
