Is this going to hamper any overclocking if I switch from the PC-8500 Dominators to the PC-8000 Redlines? I am thinking of picking up whichever kit comes in first.

The Mushkin kit should be fine and probably won't limit your overclocking unless you want to exceed 4.5Ghz with your CPU. The Xeon 3110 has a multiplier of 9 and default FSB of 333MHz (9x333=3GHz). The Mushkin RAM is rated to work up to FSB speeds of 500MHz, allowing for 9x500 = 4.5GHz.
