About timings, the lower the numbers the better (eg. 4-4-4-12 > 5-5-5-15)

Usually, if the RAM is capable of 1000mhz 5-5-5-15, then it should be able to do 4-4-4-12 at 800mhz.

You won't need DDR2-1000 unless you plan on OC'ing with a high FSB and low multi. That being said, having faster RAM definitely gives you more options and headroom when OC'ing.

If you're worried about not having 4-4-4-12 timings at 800mhz, then go for a quality set that is almost guaranteed to do 1000mhz (eg. Mushkin XP2-6400, Crucial Ballistix, etc...)
