Go for the Corsair or Silverstone psus. Modular is easiest to manage your cables. If you go Intel, take a good look at the Asus P6X58D-E. Great board, overclock friendly as well Though you said you wouldn't, it's still a good board. That is if you go socket 1366.
For cpu, go with 930.
If you go i5, the 750 is good. As for 1156 boards, I'm not sure because I've never considered that over 1366, which imho is a much better setup. Perhaps the experts can help as I'm just a novice but had a lot of help assembling my system from experts as well.
Do a bit of research on what you really want. Usb 3 and the new sata are what you should consider.
