You can't compare water to air. Water is amazing for how well it cools these GPU's down. But did you turn the fan speed up on the stock cooler? Most people don't do that and complain loudly. Stock temps for air are usually 50Cor so idle and ~70C load which is well within operational limits and won't hurt a thing. With the fan on 100%, most people see a 20C drop in those temps as well even with the stock cooler.
