I would just stick with your 8800GT 640MB as going from a 8800GTS 640MB to a 8800GT doesn't justify the money you'll spend unless you'll save some money. Plus the availability of a good (XFX or EVGA) 8800GT is quite scarce. Its like someone wasting money buying a E6420 when they already have a E6400.
SLI is overated and I wouldn't spend the money on it.
You are bette off waiting for nVidia's highend video card since its suppsoed to be released quite soon in Q1 2008 I believe.
